This dish is one of my all-time favorites. Hopefully, you'll enjoy the terrific tasting stuffing as a side for the holidays or anytime you feel like having something delicious!

INGREDIENTS

  • 1 large diced onion
  • 2 teaspoons cooking oil
  • 12 oz. ground pork sausage, either mild or hot
  • 1 pound ground beef
  • 1/2 cup flat-leaf parsley, chopped
  • 1/2 cup fresh chestnuts, boiled and chopped (boil for 20 minutes with shell slit open)
  • 1/4 cup pine nuts (also known as pignoli nuts)
  • 1/2 cup rice
  • 1 cup water
  • 1/4 cup golden raisins (hydrated in water for 30 minutes)
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon ground thyme
  • 3 teaspoons poultry seasoning
  • a sheet or two of baking parchment paper
DIRECTIONS
  1. Saute the diced onions in oil until translucent. Add your sausage and hamburger and saute over medium flame until brown. Add your rice and all the rest of the ingredients and cook covered for 20 minutes or until rice is cooked.
  2. Take the stuffing off the stove, transfer it to a baking pan that you'll cover with the parchment paper covering the stuffing. Bake for 45 minutes in a 350° F oven, tossing the stuffing with a fork every so often, so that all the rice bakes evenly. That's it!

TIP: As a side note, this dish can be made a day or so ahead of time, giving the flavors more time to marry. This dish can also be frozen for future use! Enjoy...Kali Oreksi... in Greek!
