I found this recipe while browsing Pinterest, and it came from The Clever Carrot. However, I tweaked the ingredients a little bit to fit my healthier dietary needs this month (no bacon or cheese filled tortelloni for me, but feel free to stick to the regular recipe). I've decided to make a wheat penne pasta with pesto sauce for a little more color. This recipe only takes 20 minutes and serves four people for less than $15!

INGREDIENTS:

1 box wheat penne

2 c. whole grape (or cherry) tomatoes

1x 16 oz bag baby spinach, washed and dried

2 c. pesto sauce

4 grilled chicken breast

salt & pepper

DIRECTIONS:

In a large pot, bring water to a boil, adding salt for seasoning and wheat penne. Follow the penne package instructions for cooking.

While the penne is cooking, warm pesto sauce in a small sauce pan using medium heat. I used a jar of Classico’s pesto sauce.

Cook tomatoes until blistering, then toss spinach until wilted. Don’t break the tomatoes up.

Drain the penne and toss together with the sauce. Add the tomatoes and spinach over pasta. Top with grilled chicken breast before serving. =)
