WBSM Kitchen Bites Trail Mix Salad With Cranberry
This weeks Kitchen Bites recipe from chef Bob Dillon from the Sail Loft Restaurant in Padanaram is another delicious salad. It's a Trail Mix Salad with cranberry, chef Dillon is keeping with the healthy theme for the month and as always keeping it simple and delicious.
Trail Mix Salad with Cranberry, Thyme Vinaigrette
Serves two
Ingredients:
12 oz bag of spring mix
2oz dried cranberries
2oz raisins
2oz roasted pecans
Black and white sesame seeds( just white will do)
2oz Granola (store bought is ok)
4oz goat cheese
Dressing ingredients:
1c extra virgin olive oil
1/2 c cider vinegar
1/2 c cranberry sauce(store bought is ok)
1 orange(juiced)
1 lemon(juiced)
1T fresh thyme
Pinch of sea salt
Pinch of black pepper
Method: in two bowls split the greens, and then top the greens with the cranberries, raisins, sesame seeds, granola, toasted pecans, and goat cheese.
Dressing: in a blender add the vinegar
, cranberry sauce, thyme, lemon juice, orange juice, pinch sea salt, pinch pepper. Put on lid and start blend 20 seconds and then while machine is on remove lid and drizzle in the extra virgin olive oil and lend for 45 more seconds.
This is a salad that should be drizzled with dressing, not tossed.
