Chef Bob Dillon from the Sail Loft Restaurant in Padanaram continues to hit recipes out of the park, this time we are making salsa.  Once again it's a very simple recipe that requires no cooking!  Here is the easy to follow recipe. Enjoy!

 

 

Pico di Gallo (Salsa)

This is a basic salsa recipe. From this recipe the sky is the limit. You can add avocados, lobster meat, watermelon, carrots to change the character and flavor of this recipe.

 

Ingredients: Makes 12 cups

4 lg ripe tomatoes

2 lg red peppers

2 lg green peppers

2 lg red onions

2 jalapeño peppers

3 limes

1/4 c rice wine vinegar

1 bunch fresh cilantro

2 T chopped fresh garlic

1/4 t cumin

1/4 t cayenne pepper

1/2 t chili powder

1/2 t sea salt

 

Method:

1/4 inch dice ( small ) the tomatoes, red and green peppers, red onion, seed and dice the jalapeños

Chop the cilantro and add. Now add the lime juice, cumin, chopped garlic, cayenne, chili powder, and sea salt. Stir together and let sit for an hour for flavors to come together.

 

Make a big batch so that you can give some as a gift to a neighbor. And add the other suggested ingredients. The lobster or the avocados to some of the base salsa to serve later in the week.

 

This salsa is great on grilled chicken, steak tips, broiled or grilled seafood.
