Kitchen Bites brought to you by the Sail Loft restaurant in Padanaram, this week Chef Bob Dillon shares his Watermelon Mignonette to put on some fresh oysters.  More and more oysters are being harvested from local waters and each with their own distinctive flavor, this mignonette will enhance the flavor not mask it like some cocktail sauces would.

Watermelon Basil Mignonette


1/4c Pinot Grigio white wine

1/4c apple cider vineger

1 lime (juiced)

1/4c very small diced watermelon

1/4t cracked black peppercorn

2 T fresh chopped basil

Combine all ingredients and keep in the fridge for a couple of hours, then top your favorite oyster with this delicious mignonette.
