You've heard the expression, it's all about location, location, location. Taking it to the extreme, it's probably the most unlikely location for a great restaurant to be inside a prison! Voted the best place to eat in Cardiff, the capital of Wales, is THE CLINK CYMRU, that opened two years ago. The competition was fierce, beating out 950 other top shelf restaurants.

Created to help prisoners learn culinary and hospitality skills, The Clink helps inmates to re-enter society with restaurant experience. Not only does the restaurant help inmates reintegrate with society, but their eclectic menu also highlights locally grown Wales produce.

Our family donated the Shawmut Diner to our local Bristol County House of Correction with the same thing in mind. When the supervised inmates open the diner to the public, they probably won't be serving pan-seared breast of chicken with sugar snap peas and spiced poached pear with hot chocolate sauce and vanilla bean ice cream, but it is our dream to see the diner help turn people's lives around to a new direction.
