The last weekend of July, you'll find me roasting legs of lamb, baking mousaka and buttering the thin filo layers of baklava and spinach pie (spanakopita) for my church's annual Greek Food Festival. Greek dishes are versatile and tasty. The recipe I'm going to share with you is one of my all-time favorite summer salads, Feta & Watermelon!

You'll need:

3 cups of watermelon chunks - 3/4 inch pieces, 1 cup chopped cucumber - 1/4 inch thick - look for dark green and firm cucumbers, 1/2 cup crumbled feta cheese, 2 tbsp. chopped fresh mint, 2 tbsp. balsamic vinaigrette dressing.

Simply combine the ingredients and enjoy one of the most refreshing, healthy and colorful summer salads! Let me know what you think!
