Cool Cucumber and Yogurt Salad Recipe
This is a delicious and easy summer salad that must be served very cold!
You’ll need: 3 very firm and very green cucumbers, 2 cloves of fresh garlic, 2 tablespoons dried mint, 1 cup plain Greek yogurt and 1 tablespoon olive oil.
Peel, quarter lengthwise and seed cucumbers. Slice thinly. Mix together with minced fresh garlic. Layer the cucumbers in a salad bowl, sprinkling Kosher salt on each layer. Let stand for 30 minutes. Pour off excess liquid and press cucumbers in a strainer to get all the water out. Crumble mint over cucumbers.
Beat yogurt by hand until smooth. Blend in olive oil, if desired. Pour yogurt mix over the cucumbers and refrigerate for at least 2 hours or more. This will serve 6 people and you can present the salad on a bed of lettuce or just as is!
