Fall is near, and one of the most pleasing and luscious meals for the family is homemade Linguica Pie. It's so easy to make and the entire family will find it tasty and tempting! This recipe is the BEST one, hands down! It comes from Jeanine Sassaville, my Sister-in-Love. First, the ingredients:

2 - 10" frozen pie crusts

1 LB. Ground Linguica ( I like Gaspar's)

1/2 large onion, chopped fine

1/2 small red bell pepper chopped fine

1/2 small green bell pepper chopped fine

1/4 cup ketchup

1 1/2 cups instant mashed potatoes

1 1/2 cups water

1 TSP salt

1/4 TSP black pepper

Saute linguica, onion and peppers. Add remaining ingredients and mix well. Put crust in a 9"-10" pie plate. Spread the mixture in crust, then place the other crust over the top. Gently form it and crimp the edges and make a few slits on the top. Brush top with a little milk. Bake at 400 degrees for 45 minutes or until the crust is golden brown. Yield: 6-8 slices.
