My wonderful wife doesn't wait till the holiday season to make a carrot cake.  She can "whip one up" any time of the year and no one complains.  To me, carrot cake with cream cheese frosting seems like a good thing on Christmas.

Ingredients

  • 3 eggs
  • 1 1/4 cup of vegetable oil
  • 2 cups of white sugar
  • 2 teaspoons of vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons of baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon of salt
  • 2 teaspoons of ground cinnamon
  • 3 cups of grated carrots
  • Nestles Chocolate Bits

Ingredients for Cream Cheese Frosting

  • 8 oz of cream cheese (softened)
  • 4 cups of confectioners sugar
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of milk

Directions

  1. Preheat oven to 350° F.  Grease 9 x 13-inch pan.
  2. In a large bowl, beat together eggs, oil, white sugar and vanilla.  In separate bowl, mix flour, baking soda, baking powder, salt and cinnamon and pour into wet mixture.  Then add three cups of grated carrots.  Next put a teaspoon of flour into a plastic baggie, and add 3/4 of chocolate bits.  Shake for 30 seconds and pour the bits into the mixture (because they've been floured, they won't sink to the bottom, I'm told).  Pour mixture into the baking pan.
  3. Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.  Let cool in pan for ten minutes, then turn out onto a wire rack and cool completely.

Time to make the frosting

  1. In a medium bowl, combine the cream cheese, confectioners sugar, milk and one teaspoon vanilla.  Use an electric mixer to "whip" the mixture till its smooth and creamy.  Frost the cooled cake
  2. Next, fight over the frosting spoons and enjoy.
